This sweet treat has a sneaky healthy ingredient - chickpeas! You won't believe how they really taste like cookie dough! Give it a try for a mid-afternoon snack or a breakfast on the go!
Ingredients
- 1 ½ cups chickpeas, rinsed and drained
 - ¼ cup peanut butter
 - ½ tsp cinnamon
 - ½ cup coconut milk
 - 3 tbsp honey
 - 15 drops stevia
 - 1 tsp vanilla
 - pinch of salt
 - ¼ cup ground flaxmeal
 - 2 tbsp Colavita Extra Virgin Olive Oil
 - ⅓ cup dark chocolate chips
 
Instructions
- Blend all ingredients together until smooth adding chocolate chunks etc last to maintain their texture.
 - The mixture should be thick but creamy. Spoon into ice pop molds and add a stick.
 - Freeze until solid.
 - Defrost for a few minutes prior to eating for optimum eating experience!
