A truly fresh, fast and flavorful breakfast that will certainly put a “spring” in your step.

Ingredients

  • 1 Jar Colavita Pesto
  • 4 eggs
  • 4 thick cup pieces of crusty bread (baguette)
  • Colavita Extra Virgin Olive Oil
  • Crushed Red Pepper

Instructions

  1. First prepare the crostini. Cut thick slices (1-2” thick) from a baguette. Place them on a baking sheet and drizzle them with Colavita olive oil. Place them under your oven’s broiler and broil until golden brown (about 2 minutes). Remove from the oven and set aside.
  2. Heat up a medium pan over medium-low heat. Add the jar of Colavita pesto and warm it in the pan for 1-2 minutes.
  3. Crack the eggs into the pesto and cook them until the whites are set and the yolks are still runny.
  4. Using a spatula, remove the eggs, along with some of the surrounding pesto one at a time from the pan, placing one each on a crostini.
  5. Sprinkle with hot pepper and serve.
